The best thing about trifle is that there are so many variations to it.  I had some leftover cake from the other night when I made Chocolate Cream Cakes I had stored it in an airtight container in the fridge.  When I was rooting through the refrigerator today trying to use up odds and ends I thought it would be a great idea to make a trifle.  If you do not know much about trifles the concept is simple really it’s a layered dessert.  The first layer of the trifle is always a cake base, you may use brownies, chocolate cake, sponge cake, pound cake or lady fingers.  The next step is usually adding a liqueur that compliments the trifle to the cake base.  Then a layer of jam covers the cake, then there is a fruit layer, a custard or whipped cream layer and then you repeat the process until your dish is full.  Generally, you allow the trifle to sit in the fridge over night to allow the flavors to meld.  You can make trifles in a large bowl or you can make them in individual dishes.  The word “trifle” comes from the old french word “truffle”, and literally means something whimsical or of little consequence :)

For the Mixed Berry Trifle:

2 cups crumbled chocolate cake (left over)

1 cup mixed berries, cut in half

3/4 cup raspberry jam

1 1/2 cup whipping cream

To Prepare 4 individual Trifles:

First layer of chocolate cake

First layer of chocolate cake

Second layer raspberry jam

Second layer raspberry jam

Third layer mixed berries

Third layer mixed berries

Fourth layer whipped cream

Fourth layer whipped cream

Place 4 clear glasses or dessert cups, something that will display all of the layers, on the counter.  Place a layer of the chocolate cake in the bottom of the glasses.  Cover the cake layer with a layer of raspberry jam, place a layer of the sliced berries on top of the jam.  Add a layer of whipping cream on top of the berries.  Repeat this process until the glasses are full.  Top with whipping cream and more berries.  Cover the prepared trifle and place in the fridge overnight.

You can use so many different ingredients when constructing a trifle.  It is all about the presentation of the layers.  Using different cakes and fruits really makes this a versatile dessert for any occasion or if you are trying to use up odds and ends.  This is such a simple dessert to make and would make a wonderful family project as the trifles may be personalized to each person’s taste!
