Breakfast Bulgur Porridge
Bulgur is a Middle Eastern staple that sounds more exotic than it is; bulgur is what’s left after wheat kernels have been steamed, dried, and crushed. This cereal grain has been a food staple for years because it offers an inexpensive source of low-fat protein, making it a wonderfully nutritious addition to your low-calorie meal plan. It is high in fiber and protein, and low in fat and calories, bulgur is another food that offers bulk and nutrients to fill you up without adding pounds. One thing to keep in mind, a cup of bulgur has fewer calories, less fat, and more than twice the fiber of brown rice, who knew?!! Bulgur remains high in protein and minerals even after processing. That means it’s an ideal foundation for meals, allowing you to skip higher-fat protein sources, like most meats.
We all know that each day should begin with a well balanced breakfast, right?! This breakfast porridge is an excellent way to start each day because it will fill you up and keep you going for a few hours without sputtering out or getting tired. You can add whatever fruit you fancy. Add sugar or not. This is your porridge you can do whatever you like to it
Breakfast Bulgur Porridge
Ingredients
1 cup low-fat (1%) milk, plus more for serving
1 cup water
1/2 cup medium-grind bulgur
1/4 cup currents
1 to 2 tablespoons brown sugar (optional)
sliced fresh strawberries, for serving
To Prepare
In a medium saucepan, combine milk, bulgur, currents, and water; bring to a boil. Reduce heat to medium, and simmer, stirring occasionally, until bulgur is tender and mixture is the consistency of oatmeal, 10 to 15 minutes.
Divide between two bowls; sprinkle with brown sugar. Serve porridge warm with strawberries, if using, and milk to taste.

Bulgur is a relatively new grain for me. I thoroughly enjoy it and find it has a lot of similarities to couscous. Perhaps you remember the Bulgur Pilaf with Pine Nuts and Dried Cranberries or the Bulgur Salad with Feta and Pine Nuts, that I made. This is the perfect example of bulgur’s versatility. If your New Year Resolution was weight loss you really should give bulgur a chance to live a happy life within the depths of your tummy. Bulgur will work hard for you inside while you work hard on your outside
